Mousse de maple en canasta de Chocolate y Amaranto. (Maple Mousse in an edible container)

What a great challenge, It kept me thinking, and thinking, over and over, on what would be the perfect container, and it was difficult, because when I thought I have it very clear someone else have already done it, je je je, finaly I decide to try with 2 options:

1.- I used 3 ingredients I really love, CHOCOLATE, AMARANTH or ALEGRÍA and TOASTED ALMONDS, so tasty and crunchy, just perfect.

I did a basket because of the season, easter, I wanted to add some eggs but I thought it was so sweet, I prefer fresh fruit, in order to balance the flavor.

2.- I did Buñuelos, a fried dough topped with sugar and cinammon, Delicious!!!!I hope you enjoy the recipe as much as I did.

Hola Hola, no saben con que me sorprendieron este mes, pues con un mousse de maple, un sabor nuevo para nosotros pues por estas tierras resulta dificil conseguir la miel de maple, pero que vale la pena probar. Por otro lado el reto incluía hacer un contenedor comestible, el que se nos ocurriera, pensé y pensé y pues al final opte por dos opciones: chocolate ya saben que soy adicta a él y amaranto, muy típico de nuestra tierra, lo mezclé con un poco de almendra fileteda y tostada, lo que le dio una textura crujiente, adorable, quizás fue lo que más me gustó de todo el reto, el mousse, diferente pero todavía tengo que acostumbrarme, tal vez muy suave para mi gusto.

Otra vez la compañía maravillosa, la gran chef Trini, mi sous chef, la pequeña Aitana y mi adorado Rodolfo, gran gran fotografo, gracias por esas estupendas tomas!!.

Vayamos ahora a lo nuestro:

Receta para el Mousse de Maple

1 taza de miel de Maple (auténtico, no jarabe para hotcakes)
4 yemas de huevo
1 paquete de gelatina sin sabor
1 1/2 taza de crema para batir

Instrucciones

1. Hervir miel de maple, retirar del fuego.


2. Batir la yemas con un poquito de miel de maple (esto es par atemperar las yemas).
3. Agregar las yemas calientes a la miel de maple y mezclarlo bien.
4. Medir 1/4 de taza de crema para batir y espolvoearle la grenetina. Dejar reposar por 5 minutos. Meter el bowl al micro por 45 segundos (meter por lapsos de 10 segundos hasta que la gelatina se disuelva por completo.
5. Revolver la mezcla de gelatina y crema para batir en la mezcla de miel de maple y dejar a un lado.
6. Revolver ocasionalmente por 1 hr (yo esperé mucho menos).
7. Batir la crema restante. Revolver 1/4 de l crema batida en la mexcla de miel de maple. Agregar el resto de la crema y refrigerar 1 hr aproximadamente.




Para la canasta de chocolate, amaranto y almendra
250 grs de chocolate obscuro para cobertura
100 grs de almendra fileteada
100 grs de amaranto


Tostar almendras
Poner a baño María el chocolate hasta fundir
Agregar amaranto
Agregar almendras tostadas
Poner en el molde deseado y refrigerar


Receta de buñuelos de molde
250 grs de azúcar
2 cucharadas de canela molida
8 huevos
350 grs de harina
3 tazas de leche
aceite para freir



Preparación

En un tazón mezcle el azúcar con la canela. En otro bata los huevos con la harina y leche hasta obtener una pasta con consistencia de atole. Ponga aceite a calentar, cuando esté bien caliente eche pequeñas cucharadas de la masqa y deje freir, escurra y pase el buñuelo por azúcar y canela.

En este caso a parte hicimos una torre de buñuelos y entre uno y otro le pusimos el mousse de miel de maple. Sólo o acompañados son una suculencia.

  10. Fresh fruit is a perfect way to balance out the mousse, and with chocolate it must have been divine!
